Popcorn tofu
Ingredients
- 1 block extra firm tofu
- 1 cup panko breadcrumbs
- 2 tbsp cajun spice
- 1 tsp smoked paprika
- 1 tsp garlic powder
- 2 tbsp nooch yeast
- ½ tsp salt
- Black pepper
- ½ cup unsweetened almond milk
- ½ cup plain flour
- ½ cup vegan mayo
- 2 tbsp lemon juice
- 1 tbsp cajun spice
- 2 tsp maple syrup
Steps
- Drain and press the tofu.
- Cut tofu into 1 inch slices then tear into bite sized pieces with your hands.
- In a bowl mix the breadcrumbs, cajun spice, smoked paprika, garlic, nooch, salt and pepper.
- In another bowl place the almond milk and in one more place the flour.
- One person should place the tofu into the flour and then into the milk.
- The other person can hand toss the tofu in the breadcrumb mix until fully coated. Repeat.
- Place tofu on a lined baking sheet, spray with oil and cook at 200°C for about 20 minutes. Flip halfway.
- Mix remaining ingredients together in a bowl, taste and season with salt and pepper.
