Ingredients

  • 1 block extra firm tofu
  • 1 cup panko breadcrumbs
  • 2 tbsp cajun spice
  • 1 tsp smoked paprika
  • 1 tsp garlic powder
  • 2 tbsp nooch yeast
  • ½ tsp salt
  • Black pepper
  • ½ cup unsweetened almond milk
  • ½ cup plain flour
  • ½ cup vegan mayo
  • 2 tbsp lemon juice
  • 1 tbsp cajun spice
  • 2 tsp maple syrup

Steps

  1. Drain and press the tofu.
  2. Cut tofu into 1 inch slices then tear into bite sized pieces with your hands.
  3. In a bowl mix the breadcrumbs, cajun spice, smoked paprika, garlic, nooch, salt and pepper.
  4. In another bowl place the almond milk and in one more place the flour.
  5. One person should place the tofu into the flour and then into the milk.
  6. The other person can hand toss the tofu in the breadcrumb mix until fully coated. Repeat.
  7. Place tofu on a lined baking sheet, spray with oil and cook at 200°C for about 20 minutes. Flip halfway.
  8. Mix remaining ingredients together in a bowl, taste and season with salt and pepper.
