Ingredients

  • 1 ½ cups sushi rice
  • 3 cups water
  • ¼ cup sesame seeds
  • 2 tbsp rice wine vinegar
  • 1 tbsp sugar
  • ½ tsp salt
  • 1 small sweet potato
  • 1 tsp toasted sesame oil
  • ½ avocado
  • 5 tbsp soy sauce
  • 5 tbsp mirin
  • 2 tbsp sugar
  • 1 tbsp rice wine vinegar
  • 4 tsp corn starch
  • 4 tsp warm water

Steps

  1. Cook the rice.
  2. Mix vinegar, sugar and salt and pour over rice. Add sesame seeds and mix thoroughly. Let cool.
  3. Peel the sweet potato and cut into thin slices. Steam the slices until soft. Peel and slice the avocado.
  4. In a small saucepan combine soy sauce, mirin, vinegar, and sugar. Bring the sauce to boil.
  5. Mix cornstarch into warm water then pour into sauce then keep stirring until thickened.
  6. Line a small measuring cup with glad wrap and put about 1 tbsp cooled rice to it. Press the rice to solid layer.
  7. Take one slice of sweet potato, dip it to the teriyaki sauce and set over rice
  8. Set also an avocado slice on top of the sweet potato.
  9. Cover the filling with some rice and press it to a uniform ball.
  10. Lift the onigiri from the cup with kitchen film and shape the rice ball with your hands. Repeat.
  11. Preheat and oil pan, fry onigiri until each side is crispy and brown.
