Ingredients

  • 2 cups cold mashed potato
  • 2 cups grated potato
  • 2 cups all-purpose flour
  • 1 ½ tsp salt
  • 1 tsp baking soda
  • 1 ½ to 2 cups milk
  • 1 ½ tbsp lemon juice
  • Butter
  • Chopped scallions

Steps

  1. Combine the milk and lemon juice in a bowl and stir well. Let sit for 5 - 10 minutes until it curdles slightly.
  2. In a small bowl, combine the flour, baking soda and salt. Set aside.
  3. Grate the potatoes, place them on a cotton clean kitchen towel and wring out as much liquid as you can.
  4. Place the mashed potato, grated potato, and flour mixture in a large bowl. Add 1 ½ cups buttermilk and combine.
  5. Heat some butter, bacon grease, lard or oil in a heavy pan over medium-high.
  6. Scoop the potato mixture into the pan to form individual patties, pressing down on them to flatten them.
  7. Fry until the bottom is nicely browned and then flip them over and fry the other sides are likewise nicely browned.
  8. Transfer the boxty to a warm oven while you fry the remaining boxty.
  9. Serve immediately while hot. Sprinkle with chopped spring onion greens.
