Charred courgette
Ingredients
- 2 courgettes
- 2 tbsp tahini
- 4 tbsp vegan yogurt
- Juice of ½ lemon
- 2 tsp agave
- 1 tsp dukkah
Steps
- Cut courgettes in half and score diagonally.
- Sprinkle with salt and set aside for 10-15mins.
- Then pat dry and fry each side in some oil for 4-5mins.
- Mix remaining ingredients and serve drizzled over the courgette.
