Gyros
Ingredients
- 4 tbsp olive oil
- 1 red onion, diced
- 4 cloves garlic, diced
- ⅛ tsp cloves
- ¼ tsp cinnamon
- ½ tsp cumin
- 2 tsp dry oregano
- ½ tsp chilli power
- 2 tbsp tomato paste
- 2 tins jackfruit
- 4 tbsp soy sauce
- 2 tbsp maple syrup
- ¼ tsp white pepper
- 2 tsp apple cider vinegar
- Cherry tomatoes, quartered
- Tzatziki
- 6 pitas
- Lettuce, shredded
- 1 red onion, finely sliced
Steps
- Drain the jackfruit. Cut the firm, pointy ends off each piece of jackfruit. Set aside.
- Heat oil in the pan. Cook red onion until softened, translucent and lightly caramelised.
- Add garlic and fry off gently until soft and fragrant.
- Add cloves, cinnamon, cumin, and oregano. Cook for a minute, stirring the whole time.
- Mix in the tomato paste.
- Add the jackfruit, soy sauce, maple syrup and apple cider vinegar. Mix well.
- Squash the jackfruit so that the individual fibres separate more.
- Season with white pepper and chilli. Simmer gently for 10-15 minutes then cool and refrigerate.
- Set the oven to 200°C, spread the jackfruit over a baking tray
- Bake for about 20-25 minutes, until a little caramelised and browned around the edges.
- Just before serving, warm pitas up in a low oven.
- Place warmed-up pitas on a work surface, fluffier side down.
- Fill with lettuce, cucumber, tomato, onion, tzatziki and jackfruit.
