Curry puffs
Ingredients
- 2 potatoes, peeled and diced
- ¼ cup carrot, diced
- 1 onion, chopped
- ¼ cup frozen peas
- 1 green chilli, chopped
- 1 red chilli, chopped
- 4 cloves garlic, minced
- 1 tbsp chopped curry leaves
- 1 ½ tbsp curry powder
- ½ tsp chilli powder
- ½ tbsp garam masala
- 1 tsp cumin
- ¼ tsp turmeric
- 1 tsp sugar
- 1 tsp mushroom powder
- 80ml water
- 2 sheets of Puff pastry
Steps
- Heat oil in a pan, sauté onion and garlic until softened.
- Add curry leaves and spices, cook for few minutes.
- Add potatoes, cook a little, then add carrots.
- Once mostly cooked add the frozen peas.
- Add water and cook until the potatoes are soft and tender.
- Cut pastry into 4 squares, fill each with curry mix and seal the edges.
- Baked for 30 minutes or until golden brown.
