Ingredients

  • 1 tsp cinnamon
  • 1 tbsp coriander
  • ¼ tsp all spice
  • ¼ tsp cayenne pepper
  • ½ tsp each salt and pepper
  • 2 tbsp fresh thyme
  • 4 cloves garlic
  • 1 tbsp fresh grated ginger
  • 3 tbsp lime juice
  • ¼ cup soy sauce
  • 2-3 tbsp maple syrup
  • 2 Tbsp melted coconut oil
  • 3 stalks spring onions
  • Chillies
  • Eggplants
  • ¼ cup BBQ sauce
  • 1 tbsp lime juice
  • 1 tbsp olive oil
  • 1 tbsp maple syrup
  • 1 tsp fresh grated ginger
  • 1 pinch each salt and pepper
  • 1 stalk spring onion
  • 1 pinch cayenne pepper
  • Rice

Steps

  1. Clean and cook the rice.
  2. In a bowl mix cinnamon, coriander, all spice, cayenne, salt, pepper, thyme, garlic, ginger, lime juice, soy sauce, maple syrup, coconut oil, spring onions and chillies.
  3. Slice eggplant into ½-inch-thick steaks and brush both sides with the marinade.
  4. In the frying pan add oil. Once hot add eggplant and grill on both sides until golden brown.
  5. Prepare sauce by adding BBQ sauce, lime juice, oil, maple syrup, ginger, salt, pepper, onion, and cayenne.
