Jerk eggplant
Ingredients
- 1 tsp cinnamon
- 1 tbsp coriander
- ¼ tsp all spice
- ¼ tsp cayenne pepper
- ½ tsp each salt and pepper
- 2 tbsp fresh thyme
- 4 cloves garlic
- 1 tbsp fresh grated ginger
- 3 tbsp lime juice
- ¼ cup soy sauce
- 2-3 tbsp maple syrup
- 2 Tbsp melted coconut oil
- 3 stalks spring onions
- Chillies
- Eggplants
- ¼ cup BBQ sauce
- 1 tbsp lime juice
- 1 tbsp olive oil
- 1 tbsp maple syrup
- 1 tsp fresh grated ginger
- 1 pinch each salt and pepper
- 1 stalk spring onion
- 1 pinch cayenne pepper
- Rice
Steps
- Clean and cook the rice.
- In a bowl mix cinnamon, coriander, all spice, cayenne, salt, pepper, thyme, garlic, ginger, lime juice, soy sauce, maple syrup, coconut oil, spring onions and chillies.
- Slice eggplant into ½-inch-thick steaks and brush both sides with the marinade.
- In the frying pan add oil. Once hot add eggplant and grill on both sides until golden brown.
- Prepare sauce by adding BBQ sauce, lime juice, oil, maple syrup, ginger, salt, pepper, onion, and cayenne.
