Ingredients

  • ¾ cup warm water
  • 1 tsp active yeast
  • 1 tsp sugar
  • 2 cups flour
  • 1 tsp salt
  • ¾ tsp baking powder
  • 3 cloves garlic, minced
  • ¼ tsp ground cumin
  • 3 Tbsp plain dairy-free yogurt
  • 2 Tbsp olive or avocado oil
  • Coriander

Steps

  1. Add yeast and sugar to warm water. Stir and set aside about 10 minutes.
  2. Add flour, salt, and baking powder to a large mixing bowl and whisk to combine.
  3. Once yeast is foaming, add yogurt and oil and stir to combine.
  4. Add to dry ingredients and use a fork to mix - the dough will be sticky.
  5. On a lightly floured surface gently knead for 5 turns and form into a loose ball.
  6. Place back in mixing bowl and rub with a bit more oil and turn to coat.
  7. Cover set in a warm place for at least 2 hours (up to 4 hours).
  8. Knead on a floured surface for 30 seconds then divide into six even pieces.
  9. Lightly knead each ball then set on a clean surface. Cover and let rest for 10 minutes.
  10. Begin heating a pan. Roll out dough into an oval. Flip over and pat the dough with a bit of water.
  11. Press the garlic and coriander onto the other side. Then place the wet-side down on the hot pan.
  12. Cook until edges of the dough look dry and it starts to bubble. Flip the dough and cook until the underside is dark brown.
