Black pepper tofu
Ingredients
- 1 block tofu
- 2 tbsp cornstarch
- 2 tbsp vegan butter
- 6 shallots, sliced
- 8 cloves garlic, sliced
- 3 chillies, sliced
- 1 inch ginger, chopped
- 1 red pepper
- 1 green pepper
- 1 tbsp sesame oil
- 3 tbsp kecap manis
- 2 tbsp light soy sauce
- 2 tbsp dark soy sauce
- ¼ cup vegetable stock
- 3 tbsp maple syrup
- 3 tbsp pepper
- 1 ½ inch knob ginger
- 1 bunch scallions
- 1 bunch coriander
- Rice
Steps
- Drain and press the tofu. Clean and cook the rice.
- Cube the tofu then toss in cornstarch and shake off the excess.
- Heat oil in the frying pan and cook the cubed tofu in batches.
- In the wok melt the butter. Add the shallots, chillies, garlic and ginger.
- Sauté on low until softened. Then add the bell peppers and cook until mostly softened.
- Add the soy sauces, stock, maple syrup and pepper and stir.
- Add the tofu to warm it up then turn off the heat and stir in the spring onions and coriander.
