Cashew ricotta
Ingredients
- 1 ½ cups cashews
- ½ cup water
- Juice of 1 large lemon
- 1 - 2 tbsp nutritional yeast
- 1 garlic clove
- ½ tsp onion powder
- Salt and pepper
Steps
- Soak cashews for at least 2 hours or in hot water for 15 minutes.
- Drain cashews and place all ingredients in a blender, process until creamy.
- Taste and adjust seasonings.
