Ingredients

  • Rice noodles
  • 1 block tofu
  • ¼ cup soy sauce
  • 2 tbsp Sriracha
  • 1 lime (juice and zest)
  • 4 tbsp rice vinegar
  • ¼ cup stock
  • ¼ cup soy sauce
  • 4 tbsp brown sugar
  • 2 Thai red chillies
  • 2 tbsp Sriracha
  • 1 large, diced onion
  • 6 cloves garlic
  • 1 red pepper
  • 1 green pepper
  • 1 carrot
  • Pak choi
  • 1 lime
  • 1 cup Thai basil

Steps

  1. Drain and press the tofu.
  2. Marinate by covering with ingredients up until lime.
  3. Cook noodles by covering in boiling water, drain when cooked.
  4. Whisk sauce ingredients together.
  5. Pour sauce over noodles prior.
  6. Cook marinated tofu in frying pan.
  7. Cook garlic, ginger and chilli in the wok.
  8. Add carrot, then peppers, then onion.
  9. Add tofu and noodles to pan, once cooked stir in the basil.
