Ingredients

  • ½ cup peanut butter
  • ½ cup coconut milk
  • 3 tbsp soy sauce
  • 2 tbsp finely minced ginger
  • 1 tbsp maple syrup
  • 1 tbsp lime juice
  • 1 tsp Sriracha
  • 2 cloves garlic, finely minced
  • Soba noodles
  • 1 cup frozen edamame
  • 1 onion, thinly sliced
  • Cherry tomatoes
  • 2 bell peppers
  • 1 carrot, cut into matchsticks
  • Green beans
  • Coriander, sesame seeds, and lime wedges, to serve

Steps

  1. Boil water and cook noodles according to package directions. Add edamame for last minute then drain.
  2. Combine all the ingredients for sauce along with 1 cup of water in a bowl and stir together.
  3. Cook the vegetables in the wok.
  4. Add the sauce to the veggies and stir through. Pour the veggies over the noodles and toss the two together.
