Creamy coconut peanut noodles
Ingredients
- ½ cup peanut butter
- ½ cup coconut milk
- 3 tbsp soy sauce
- 2 tbsp finely minced ginger
- 1 tbsp maple syrup
- 1 tbsp lime juice
- 1 tsp Sriracha
- 2 cloves garlic, finely minced
- Soba noodles
- 1 cup frozen edamame
- 1 onion, thinly sliced
- Cherry tomatoes
- 2 bell peppers
- 1 carrot, cut into matchsticks
- Green beans
- Coriander, sesame seeds, and lime wedges, to serve
Steps
- Boil water and cook noodles according to package directions. Add edamame for last minute then drain.
- Combine all the ingredients for sauce along with 1 cup of water in a bowl and stir together.
- Cook the vegetables in the wok.
- Add the sauce to the veggies and stir through. Pour the veggies over the noodles and toss the two together.
