Palak paneer
Ingredients
- Rice
- Naan
- 1 block tofu
- 1 ½ tsp curry powder
- 5 cups spinach
- Coconut oil
- 1 ½ tsp cumin seeds
- Ginger
- 6 cloves garlic
- 1 onion
- 2 chillies
- 1 can diced tomatoes
- ½ cup vegetable stock
- Assorted spices
Steps
- Cook the rice.
- Drain and press the tofu and preheat the oven to 200°C.
- Season tofu with curry powder, pepper and salt.
- Sauté tofu for 3-4 minutes then put in oven for about ten minutes.
- Boil a large pot of water (half full) on the stove.
- Cook the onion, ginger, garlic, chilli, mustard seeds and cumin seeds.
- Add diced tomatoes.
- Add spinach to boiling water and cook for 2 minutes then strain and rinse with cold water.
- Add the tomato mixture to the blender with spinach and vegetable stock.
- Cook the blended sauce with added spices.
- Add tofu to the sauce and serve over rice with naan
