Ingredients

  • Rice
  • Naan
  • 1 block tofu
  • 1 ½ tsp curry powder
  • 5 cups spinach
  • Coconut oil
  • 1 ½ tsp cumin seeds
  • Ginger
  • 6 cloves garlic
  • 1 onion
  • 2 chillies
  • 1 can diced tomatoes
  • ½ cup vegetable stock
  • Assorted spices

Steps

  1. Cook the rice.
  2. Drain and press the tofu and preheat the oven to 200°C.
  3. Season tofu with curry powder, pepper and salt.
  4. Sauté tofu for 3-4 minutes then put in oven for about ten minutes.
  5. Boil a large pot of water (half full) on the stove.
  6. Cook the onion, ginger, garlic, chilli, mustard seeds and cumin seeds.
  7. Add diced tomatoes.
  8. Add spinach to boiling water and cook for 2 minutes then strain and rinse with cold water.
  9. Add the tomato mixture to the blender with spinach and vegetable stock.
  10. Cook the blended sauce with added spices.
  11. Add tofu to the sauce and serve over rice with naan
