Ingredients

  • 1 onion
  • 6 garlic cloves
  • 1 red pepper
  • 1 green pepper
  • 1 eggplant
  • Spinach
  • 2 cans tomatoes
  • 2 tomatoes
  • 1 tbsp tomato paste
  • 1 tsp cumin
  • 1 tsp paprika
  • 1 tsp chilli
  • 2 tsp brown sugar
  • 1 block tofu
  • 2 chillies
  • Coriander

Steps

  1. Drain and press the tofu.
  2. Sauté the onions and chillies until the onions start to brown.
  3. Add the garlic and bell peppers.
  4. Add the eggplant.
  5. Add the canned tomatoes, tomato paste, sugar, tofu and spices. Simmer.
  6. Add the spinach and mix until wilted.
  7. Serve with bread and fresh coriander
