Vegan shakshuka
Ingredients
- 1 onion
- 6 garlic cloves
- 1 red pepper
- 1 green pepper
- 1 eggplant
- Spinach
- 2 cans tomatoes
- 2 tomatoes
- 1 tbsp tomato paste
- 1 tsp cumin
- 1 tsp paprika
- 1 tsp chilli
- 2 tsp brown sugar
- 1 block tofu
- 2 chillies
- Coriander
Steps
- Drain and press the tofu.
- Sauté the onions and chillies until the onions start to brown.
- Add the garlic and bell peppers.
- Add the eggplant.
- Add the canned tomatoes, tomato paste, sugar, tofu and spices. Simmer.
- Add the spinach and mix until wilted.
- Serve with bread and fresh coriander
