Buttermilk cheddar biscuits
Ingredients
- 1 cup vegan yogurt
- ½ cup plant milk
- 1 tbsp apple cider vinegar
- 2 cups AP flour
- 1 tbsp sugar
- 1 ½ tsp salt
- 4 tsp baking powder
- 1 tbsp nooch
- ½ cup cold vegan butter
- 1 cup vegan cheddar shreds
- Chives, thinly sliced
Steps
- Preheat the oven to 220°C and line a baking tray.
- Mix yogurt, milk and vinegar in a bowl, set aside for five minutes.
- Add dry ingredients to a large bowl and whisk together.
- Add vegan butter and mix in with hands the flour is in tiny clumps.
- Add cheddar and continue to press in with your hands until it’s incorporated.
- Add chives and mix in.
- Pour in buttermilk and fold ingredients together with a spatula for 1 minute.
- Roll dough onto a floured surface, add flour, then roll out into a 4cm sheet.
- Use a cookie cutter to portion biscuits.
- Add biscuits to the baking tray and bake in the oven for 15-20 minutes.
