Ingredients

  • 1 cup vegan yogurt
  • ½ cup plant milk
  • 1 tbsp apple cider vinegar
  • 2 cups AP flour
  • 1 tbsp sugar
  • 1 ½ tsp salt
  • 4 tsp baking powder
  • 1 tbsp nooch
  • ½ cup cold vegan butter
  • 1 cup vegan cheddar shreds
  • Chives, thinly sliced

Steps

  1. Preheat the oven to 220°C and line a baking tray.
  2. Mix yogurt, milk and vinegar in a bowl, set aside for five minutes.
  3. Add dry ingredients to a large bowl and whisk together.
  4. Add vegan butter and mix in with hands the flour is in tiny clumps.
  5. Add cheddar and continue to press in with your hands until it’s incorporated.
  6. Add chives and mix in.
  7. Pour in buttermilk and fold ingredients together with a spatula for 1 minute.
  8. Roll dough onto a floured surface, add flour, then roll out into a 4cm sheet.
  9. Use a cookie cutter to portion biscuits.
  10. Add biscuits to the baking tray and bake in the oven for 15-20 minutes.
