  • 6 baby bok choy
  • 4 spring onions, sliced diagonally
  • 5-6 cloves of garlic, minced
  • 1 inch ginger, grated
  • 1 ½ tbsp sesame oil
  • 1 tbsp soy sauce
  • ½ cup water
  • Cornstarch slurry

Steps

  1. Cut the bok choy in half or quarters depending on size. Rinse to remove any dirt.
  2. Blanch the bok choy in boiling salted water for 30 seconds. Set aside.
  3. In the wok sauté the garlic and ginger in the sesame oil on medium until fragrant. Add in the soy sauce.
  4. Add the bok choy to the wok and cook for a minute before adding in the spring onions.
  5. Raise the heat slightly and add the water.
  6. Let everything cook for a couple of minutes while stirring then add in the cornstarch slurry.
  7. Season with salt and pepper and mix well until sauce has completely thickened.
