Garlic mashed potatoes
Ingredients
- 2 bulbs garlic
- 900g potatoes, peeled and cubed
- 5 tbsp butter
- ⅔ cup oat milk
- Pepper, to taste
- Salt, to taste
- Chives, chopped
Steps
- Preheat the oven to 220˚C. Cut about ½ inch off the top of the garlic bulb.
- Drizzle the cut portion with olive oil, then wrap in tin foil.
- Place on a baking sheet and roast for 35 minutes. Unwrap and cool to handling temperature.
- Place the potatoes in a large pot and add enough water to cover them.
- Bring to a boil, then cover and reduce to a simmer. Cook until they are tender.
- Drain the potatoes and put in a large bowl. Squeeze in the garlic then mash.
- Heat milk in the microwave. Gradually stir into the potatoes until fully incorporated.
- Stir in the butter until melted and season to taste with salt and pepper. Serve with chives.
