Ingredients

  • 2 bulbs garlic
  • 900g potatoes, peeled and cubed
  • 5 tbsp butter
  • ⅔ cup oat milk
  • Pepper, to taste
  • Salt, to taste
  • Chives, chopped

Steps

  1. Preheat the oven to 220˚C. Cut about ½ inch off the top of the garlic bulb.
  2. Drizzle the cut portion with olive oil, then wrap in tin foil.
  3. Place on a baking sheet and roast for 35 minutes. Unwrap and cool to handling temperature.
  4. Place the potatoes in a large pot and add enough water to cover them.
  5. Bring to a boil, then cover and reduce to a simmer. Cook until they are tender.
  6. Drain the potatoes and put in a large bowl. Squeeze in the garlic then mash.
  7. Heat milk in the microwave. Gradually stir into the potatoes until fully incorporated.
  8. Stir in the butter until melted and season to taste with salt and pepper. Serve with chives.
