Ingredients

  • 1 tbsp vegan butter
  • 1 shallot, finely chopped
  • 3 cloves garlic, peeled and minced
  • ½ cup vegan cream
  • ¼ tsp salt
  • ¼ tsp black pepper
  • Pinch of ground nutmeg
  • ¼ cup nutritional yeast
  • Pinch of chilli flakes
  • 250g baby spinach

Steps

  1. Melt the butter in the pan over medium-low. Add the shallots and cook until translucent.
  2. Add the garlic and cook, stirring constantly, for 1 minute more.
  3. Add the cream, salt, pepper and nutmeg and bring to a gentle boil.
  4. Cook, stirring occasionally, until the cream is thick enough to coat a wooden spoon.
  5. Add the nooch and stir. Add the spinach and stir until evenly combined and wilted.
