Garlickly creamed spinach
Ingredients
- 1 tbsp vegan butter
- 1 shallot, finely chopped
- 3 cloves garlic, peeled and minced
- ½ cup vegan cream
- ¼ tsp salt
- ¼ tsp black pepper
- Pinch of ground nutmeg
- ¼ cup nutritional yeast
- Pinch of chilli flakes
- 250g baby spinach
Steps
- Melt the butter in the pan over medium-low. Add the shallots and cook until translucent.
- Add the garlic and cook, stirring constantly, for 1 minute more.
- Add the cream, salt, pepper and nutmeg and bring to a gentle boil.
- Cook, stirring occasionally, until the cream is thick enough to coat a wooden spoon.
- Add the nooch and stir. Add the spinach and stir until evenly combined and wilted.
