Dan dan noodles
Ingredients
- 1 block tofu
- 1 red pepper
- Pak choi
- Shiitake mushrooms
- 1 tsp miso paste
- 2 tsp shaoxing wine
- 1 tsp dark soy sauce
- ½ tsp five spice
- ¼ cup ya-cai
- 3 shallots
- 2 cloves garlic, finely chopped
- 2 tbsp sesame paste
- 3 tbsp soy sauce
- 2 tsp sugar
- ¼ tsp five spice powder
- ½ tsp ground Sichuan peppercorn
- ½ cup of your prepared chili oil
- 2 cloves garlic, finely minced
- ¼ cup noodle juice
- Noodles
- Chopped peanuts
- Chopped scallion
Steps
- Finely chop the shiitake mushrooms, pak choi whites and bell peppers.
- In the wok heat some oil. Add shallots and cook until translucent.
- Add garlic and bell peppers. Once partially cooked add the pak choi whites and shiitake mushrooms.
- Add the miso paste, shaoxing wine, dark soy sauce, and five spice. Cook until liquid is evaporated. Set aside.
- Put the ya-cai into the wok and sauté for a few minutes.
- Cook noodles according to the packet instructions. At last minute add the pak choi leaves.
- Add ingredients from sesame paste to noodle cooking water to make the sauce.
- Divide the sauce, then add the noodles and pak choi. Add tofu mixture and top with peanuts and scallions.
