Green curry paste
Ingredients
- 2 tsp coriander seeds
- 1 tsp fennel seeds
- 1 tsp cumin seeds
- 1 tsp black peppercorns
- 15g green chillies, sliced
- 15g green bird's eye chillies, sliced
- 2 shallots, chopped
- 2 lemongrass stalks, chopped
- 20g galangal, chopped
- 1 inch turmeric, chopped
- 10 kaffir lime leaves
- 4 cloves garlic
- 4 sprigs coriander
- Zest of 1 lime
- 1 tbsp miso paste
Steps
- Cook the coriander, fennel, cumin and peppercorns in a dry pan until fragrant.
- Starting with the hardest ingredients first grind the ingredients into a paste in a mortar and pestle.
