Sweet and sour tofu

Ingredients

  • 1 block extra firm tofu
  • 2 tbsp dark soy sauce⁣
  • 2 tbsp soy sauce⁣
  • 3 tbsp maple syrup⁣
  • 2 tbsp ketchup
  • Juice of ½ lemon
  • Soba noodles
  • 6 cloves garlic, minced⁣
  • 4 baby bok choy, sliced
  • Broccoli
  • 1 bunch spring onions, sliced
  • 2-4 tbsp soy sauce⁣
  • 1 tsp sesame oil
  • Sesame seeds⁣
  • Avocado, sliced⁣

Steps

  1. Drain and press the tofu. Once ready tear it into chunks and toss in cornstarch.
  2. Mix ingredients from soy sauce to lemon juice to make the sauce.
  3. In a frying pan, over medium, cook tofu in oil until crispy and golden on all sides.
  4. Add sauce and cook for a minute, until tofu is evenly coated and sticky.
  5. Cook soba according to package instructions.
  6. Add more oil to the pan and fry the garlic, bok choy, broccoli and onions.
  7. Season with soy sauce and sesame oil.
  8. Drain noodles and add to the frying pan. Toss with veggies and season with soy sauce.
  9. Add tofu back to the pan and cook until heated through.
