Sweet and sour tofu
Ingredients
- 1 block extra firm tofu
- 2 tbsp dark soy sauce
- 2 tbsp soy sauce
- 3 tbsp maple syrup
- 2 tbsp ketchup
- Juice of ½ lemon
- Soba noodles
- 6 cloves garlic, minced
- 4 baby bok choy, sliced
- Broccoli
- 1 bunch spring onions, sliced
- 2-4 tbsp soy sauce
- 1 tsp sesame oil
- Sesame seeds
- Avocado, sliced
Steps
- Drain and press the tofu. Once ready tear it into chunks and toss in cornstarch.
- Mix ingredients from soy sauce to lemon juice to make the sauce.
- In a frying pan, over medium, cook tofu in oil until crispy and golden on all sides.
- Add sauce and cook for a minute, until tofu is evenly coated and sticky.
- Cook soba according to package instructions.
- Add more oil to the pan and fry the garlic, bok choy, broccoli and onions.
- Season with soy sauce and sesame oil.
- Drain noodles and add to the frying pan. Toss with veggies and season with soy sauce.
- Add tofu back to the pan and cook until heated through.
