Ingredients

  • ½ tsp mustard seeds
  • 2 dried red chillies
  • 10 curry leaves finely chopped
  • 6 cloves garlic
  • 1 red onion
  • 1 inch ginger
  • 2 tsp coriander
  • 1 tsp cumin
  • ½ tsp cayenne
  • 2 tins tomatoes
  • ½ tsp turmeric
  • 2 eggplants
  • 1 red pepper
  • 1 green pepper
  • 1 tsp tamarin paste
  • Rice

Steps

  1. Cook rice.
  2. Cook mustard seeds until they pop. Add the fenugreek seeds, red chillies, curry leaves, onion and garlic.
  3. Add the spices and tomatoes.
  4. Add in vegetables and bring to a simmer to cook them.
