Eggplant sambar
Ingredients
- ½ tsp mustard seeds
- 2 dried red chillies
- 10 curry leaves finely chopped
- 6 cloves garlic
- 1 red onion
- 1 inch ginger
- 2 tsp coriander
- 1 tsp cumin
- ½ tsp cayenne
- 2 tins tomatoes
- ½ tsp turmeric
- 2 eggplants
- 1 red pepper
- 1 green pepper
- 1 tsp tamarin paste
- Rice
Steps
- Cook rice.
- Cook mustard seeds until they pop. Add the fenugreek seeds, red chillies, curry leaves, onion and garlic.
- Add the spices and tomatoes.
- Add in vegetables and bring to a simmer to cook them.
