Spicy scalloped potatoes and cauliflower

Ingredients

  • 1 onion
  • 6 cloves garlic
  • 3 ½ tbsp flour
  • 2 cups cashew milk
  • 1 head cauliflower
  • ½ cup cheese
  • Potatoes
  • Sausages
  • Vegan sausages
  • ½ tsp coriander
  • ½ tsp cumin
  • ¼ tsp onion powder
  • ½ tsp thyme
  • ½ tsp parsley
  • ¼ tsp cayenne
  • ¼ tsp pepper
  • ¼ tsp allspice
  • ¼ tsp dash of cinnamon
  • ½ tsp lime juice

Steps

  1. Preheat the oven to 200°C
  2. Mix together spices to form spice blend.
  3. Heat oil in a skillet over medium heat. Add onion then garlic and cook until translucent.
  4. Add flour and spice blend, cook for a minute. Add lime juice and cook for a few seconds.
  5. Add milk and cheese and mix well. Continue to cook until the mixture thickens.
  6. Layer the cauliflower then potatoes in a lined baking dish.
  7. Spread the sauce over the potatoes and cauliflower.
  8. Bake covered at 200 C for 20 minutes.
  9. Cook sausages
  10. Uncover and bake another 15 minutes or until the potatoes are tender.
