Creamy mushroom pasta
Ingredients
- Pasta
- 1 cup cashews
- 2 sprigs rosemary
- 1 stock cube
- 1 ½ cups water
- 1 red onion
- 2 shallots
- 6 cloves garlic
- 450g button mushrooms
- 150g spinach
- 1 cup frozen peas
- 1 tbsp chilli flakes
Steps
- Soak the cashews in boiling water for at least half an hour.
- Cook pasta according to the packet instructions and set aside.
- Whilst the pasta is cooking, you can dice the onion and slice the mushrooms.
- Place the cashews, rosemary, stock and water in a blender and blend on high until smooth.
- Heat oil in the wok and cook the onions until soft. Add the mushrooms and garlic and cook through.
- Once the mushrooms are cooked add the pasta, chilli flakes, sauce and the frozen peas.
- Once almost done, add the spinach until it just starts wilts.
