  • Pasta
  • 1 cup cashews
  • 2 sprigs rosemary
  • 1 stock cube
  • 1 ½ cups water
  • 1 red onion
  • 2 shallots
  • 6 cloves garlic
  • 450g button mushrooms
  • 150g spinach
  • 1 cup frozen peas
  • 1 tbsp chilli flakes

Steps

  1. Soak the cashews in boiling water for at least half an hour.
  2. Cook pasta according to the packet instructions and set aside.
  3. Whilst the pasta is cooking, you can dice the onion and slice the mushrooms.
  4. Place the cashews, rosemary, stock and water in a blender and blend on high until smooth.
  5. Heat oil in the wok and cook the onions until soft. Add the mushrooms and garlic and cook through.
  6. Once the mushrooms are cooked add the pasta, chilli flakes, sauce and the frozen peas.
  7. Once almost done, add the spinach until it just starts wilts.
