Ingredients

  • 1 block tofu
  • 1 cup chopped onion
  • 6 cloves garlic, minced
  • 1 inch ginger, minced
  • 1 tbsp lemongrass paste
  • 2 chillies, deseeded and finely diced
  • ½ tsp soy sauce
  • ½ tbsp miso paste
  • 1 tsp red chilli oil
  • ½ cup vegetable stock
  • 2 tbsp soy sauce
  • 1 tbsp hoisin sauce
  • 1 tbsp cornstarch
  • 1 tbsp shaoxing rice wine
  • 1 tsp sugar
  • ½ tsp pepper
  • 1 tsp chilli flakes
  • Rice
  • Fresh coriander
  • Fresh lime wedges
  • Thinly sliced carrots
  • Crushed roasted peanuts

Steps

  1. Clean and cook the rice.
  2. Crumble the tofu until it resemble mince.
  3. In the pan with a little sesame oil add the onion, ginger, garlic and lemongrass.
  4. In a bowl mix stock, soy sauce, hoisin, cornstarch, shaoxing wine, sugar, pepper, and chilli flakes.
  5. Once fragrant add the tofu, soy sauce, miso paste and chilli oil to the pan. Fry until slightly crispy.
  6. Pour in the sauce. Once it reaches a simmer reduce the heat, stirring often, until the sauce thickens.
