Spicy ginger tofu bowl
Ingredients
- 1 block tofu
- 1 cup chopped onion
- 6 cloves garlic, minced
- 1 inch ginger, minced
- 1 tbsp lemongrass paste
- 2 chillies, deseeded and finely diced
- ½ tsp soy sauce
- ½ tbsp miso paste
- 1 tsp red chilli oil
- ½ cup vegetable stock
- 2 tbsp soy sauce
- 1 tbsp hoisin sauce
- 1 tbsp cornstarch
- 1 tbsp shaoxing rice wine
- 1 tsp sugar
- ½ tsp pepper
- 1 tsp chilli flakes
- Rice
- Fresh coriander
- Fresh lime wedges
- Thinly sliced carrots
- Crushed roasted peanuts
Steps
- Clean and cook the rice.
- Crumble the tofu until it resemble mince.
- In the pan with a little sesame oil add the onion, ginger, garlic and lemongrass.
- In a bowl mix stock, soy sauce, hoisin, cornstarch, shaoxing wine, sugar, pepper, and chilli flakes.
- Once fragrant add the tofu, soy sauce, miso paste and chilli oil to the pan. Fry until slightly crispy.
- Pour in the sauce. Once it reaches a simmer reduce the heat, stirring often, until the sauce thickens.
