Ingredients

  • 10oz pasta of choice
  • 1 cup reserved pasta cooking water
  • 1 small sweet onion, diced
  • 2 shallots, diced
  • 5 cloves garlic, minced
  • ¼ cup vodka
  • 2 cans chopped tomatoes
  • 2–3 tbsp tomato paste
  • ½ cup cashews
  • Red pepper flakes
  • Salt and pepper
  • Fresh basil
  • vegan parmesan

Steps

  1. Add the cashews to a bowl and cover with boiling water.
  2. Prepare your pasta according to package directions, al dente.
  3. Add olive oil to a pan, and sauté onions until translucent and fragrant.
  4. Add garlic to pan then turn heat to high, add vodka and cook until almost fully evaporated.
  5. Next, add tomatoes and tomato paste to the pan and cook for 1-2 minutes.
  6. Transfer pan contents to a blender, add cashews, ¼ cup pasta water and blend until smooth.
  7. Transfer sauce back into the pan and season with salt, pepper and chilli flakes.
  8. Add additional pasta water as needed to thin.
  9. Stir in cooked pasta, most of the basil and vegan parmesan. Serve and top with remaining basil.
