Penne alla vodka
Ingredients
- 10oz pasta of choice
- 1 cup reserved pasta cooking water
- 1 small sweet onion, diced
- 2 shallots, diced
- 5 cloves garlic, minced
- ¼ cup vodka
- 2 cans chopped tomatoes
- 2–3 tbsp tomato paste
- ½ cup cashews
- Red pepper flakes
- Salt and pepper
- Fresh basil
- vegan parmesan
Steps
- Add the cashews to a bowl and cover with boiling water.
- Prepare your pasta according to package directions, al dente.
- Add olive oil to a pan, and sauté onions until translucent and fragrant.
- Add garlic to pan then turn heat to high, add vodka and cook until almost fully evaporated.
- Next, add tomatoes and tomato paste to the pan and cook for 1-2 minutes.
- Transfer pan contents to a blender, add cashews, ¼ cup pasta water and blend until smooth.
- Transfer sauce back into the pan and season with salt, pepper and chilli flakes.
- Add additional pasta water as needed to thin.
- Stir in cooked pasta, most of the basil and vegan parmesan. Serve and top with remaining basil.
