Ingredients

  • 1 block tofu
  • 2 cloves garlic, minced
  • 1 inch ginger, minced
  • ½ tbsp soy sauce
  • ½ tbsp miso paste
  • 1 tsp red chilli oil
  • 2 shallots
  • 4 cloves garlic
  • 1 red pepper, diced
  • 1 green pepper
  • 1-4 chillies
  • 2 lemon grass stalks, chopped
  • Handful of fresh thai basil
  • 2 tbsp light soy sauce
  • 2 tsp dark soy sauce
  • 1 tbsp vegan oyster sauce
  • 1 tbsp vegan fish sauce
  • 1 ½ tsp sugar
  • ⅓ cup vegetable stock
  • 1 tbsp rice vinegar
  • 1 tbsp maple syrup
  • Juice of half a lime
  • Cooked rice

Steps

  1. Drain and press the tofu then crumble until it resemble mince.
  2. In the pan with a little sesame oil add the ginger and garlic.
  3. Once fragrant add the tofu, soy sauce, miso paste and chilli oil. Fry until slightly crispy then remove from the wok.
  4. In a small bowl mix the soy sauces, oyster sauce, fish sauce, sugar and stock.
  5. In the wok add some oil along with the shallots and garlic, and fry until fragrant.
  6. Add the chillies, lemongrass and green pepper and cook for another minute then add the red peppers.
  7. Once pepper is mostly cooked add the mince back to the wok.
  8. Add the sauce and cook for another minute. Add the basil, and cook until wilted.
