Ingredients

  • 400g extra firm tofu
  • 2 nori sheets
  • 5 gloves garlic
  • 1 cup water
  • 2 tbsp soy sauce or to taste
  • ½ to 1 tbsp sugar
  • 1 tbsp chilli garlic sauce
  • ½ tsp szechuan peppercorns
  • 1 tsp doubanjiang
  • 1 tsp roasted sesame seeds
  • 1 tsp rice vinegar
  • 1 tbsp corn starch
  • Rice
  • Pak choi

Steps

  1. Drain and press tofu.
  2. Clean and cook the rice.
  3. Slice the tofu into rectangles, around 2cm thick. Sprinkle some salt over the tofu.
  4. Mix ingredients from water to rice vinegar in a bowl.
  5. Cut the nori sheets into 1” thick pieces. Carefully wrap each piece of tofu with the nori.
  6. Cover the frying pan surface in oil and heat until sizzling.
  7. Place the tofu in the pan. Fry on each side until golden brown. Drain the excess oil.
  8. In pan cook the garlic then add the sauce. Stir and leave to simmer until the sauce boils.
  9. While stirring the sauce, add in the cornstarch slurry. Leave to simmer until the sauce thickens.
  10. Add the tofu and pak choi. Leave to cook until the pak choi is done.
