Mixed bean stew
Ingredients
- 1 red onion, chopped
- 6 garlic cloves, chopped
- 100g sun-dried tomatoes, chopped
- 2 tsp of smoked paprika
- ½ tsp cinnamon
- 1 tsp chilli flakes
- 1 tsp cumin
- 2 tbsp of tomato puree
- 1 can chopped tomatoes
- 1 tsp of maple syrup
- 1 can red kidney beans, drained
- 1 can black beans, drained
- 1 can butter beans, drained
- 1 bag chopped kale

Steps
- Preheat the oven to 190°C.
- Place a large pan over a medium heat and add a drizzle of olive oil.
- Add the onion, garlic and a pinch of salt. Cook until soft.
- Add the chopped sun-dried tomatoes and spices, mix well and cook for a few minutes
- Add the tomato puree, chopped tomatoes, maple syrup and beans.
- Mix then simmer for 10-15 minutes, add a dash of water if the stew becomes too thick.
- Place the chopped kale onto a lined baking tray and drizzle with olive oil and a sprinkling of salt.
- Mix well and cook for 10 minutes until crispy. Mix the kale through the stew.
