Ingredients

  • 1 red onion, chopped
  • 6 garlic cloves, chopped
  • 100g sun-dried tomatoes, chopped
  • 2 tsp of smoked paprika
  • ½ tsp cinnamon
  • 1 tsp chilli flakes
  • 1 tsp cumin
  • 2 tbsp of tomato puree
  • 1 can chopped tomatoes
  • 1 tsp of maple syrup
  • 1 can red kidney beans, drained
  • 1 can black beans, drained
  • 1 can butter beans, drained
  • 1 bag chopped kale
  • Bread

Steps

  1. Preheat the oven to 190°C.
  2. Place a large pan over a medium heat and add a drizzle of olive oil.
  3. Add the onion, garlic and a pinch of salt. Cook until soft.
  4. Add the chopped sun-dried tomatoes and spices, mix well and cook for a few minutes
  5. Add the tomato puree, chopped tomatoes, maple syrup and beans.
  6. Mix then simmer for 10-15 minutes, add a dash of water if the stew becomes too thick.
  7. Place the chopped kale onto a lined baking tray and drizzle with olive oil and a sprinkling of salt.
  8. Mix well and cook for 10 minutes until crispy. Mix the kale through the stew.
