Ingredients

  • 1 cup quinoa
  • 1 sprig of fresh thyme
  • ¼ tsp turmeric
  • 3 cups cooked quinoa
  • 3 cloves chop garlic
  • 1 ½ cup chopped kale
  • ¼ cup parsley
  • 3 tbsp chop chives
  • 2 tbsp chop dill
  • ½ tsp caraway seeds
  • 2 tbsp nutritional yeast
  • 1 tsp baking powder
  • ¼ cup gluten-free flour
  • 3 tbsp cornstarch
  • 3 tbsp grapeseed oil
  • ¾ cup water
  • ½ cup parsley
  • 6 mint leaves
  • 1 tbsp dill
  • 2 tbsp mirin
  • 3 tbsp vegan mayo
  • 1 clove garlic
  • 3 tbsp water

Steps

  1. Rinse the quinoa in a pot until water runs clear the drain.
  2. Heat the pot then add the quinoa, thyme, turmeric, salt, pepper and 1 cup of water.
  3. Cover the pot and bring it to boil, then lower to a simmer and cook for 15 minutes.
  4. Once done, separate the quinoa using a fork and transfer to a bowl to cool down.
  5. While cooling blend ½ cup parsley, mint, 1 tbsp dill, 1 clove garlic, mirin, vegan mayonnaise, salt and pepper and 3 tbsp water.
  6. Once cool add kale, ¼ cup parsley, chives, 2 tbsp dill, garlic, caraway seeds, nutritional yeast, baking powder, flour, salt and pepper.
  7. In a small bowl add cornstarch, oil and ¾ cup water; mix and add to the quinoa bowl mixture.
  8. Mix again until well combined.
  9. Form the quinoa into patties and cook in the frying pan until both sides are golden brown.
