Matcha cookies
Ingredients
- 190g all purpose flour
- ½ tsp baking powder
- ½ tsp baking soda
- ⅛ tsp salt
- 10g matcha powder
- 60g granulated sugar
- 120g brown sugar
- 90ml neutral oil
- 60ml vegan milk
- 1 tsp vanilla
- 100g chocolate chips
Steps
- Stir together the flour, baking powder, baking soda, and teaspoon salt in a medium bowl. Set aside.
- Combine matcha powder, granulated sugar, and brown sugar in a large bowl.
- Add oil and stir, then add milk and 1 teaspoon vanilla. Mix together until well incorporated.
- Sift in flour mixture, and stir until just combined. Fold in 100 g chocolate chips.
- Cover and chill the dough in the fridge overnight.
- Preheat the oven to 190°C and line two baking sheets.
- Roll 12 balls of cookie dough and place on the prepared baking sheets. Leave about 2 inches between the cookies.
- Chill for 10 minutes then bake for 10 minutes until the edges begin to set.
