  • 1 can banana blossoms
  • 2 large potatoes
  • Vegetable oil
  • Olive oil
  • Salt and pepper
  • 3 tbsp of plain flour
  • ¼ cup of nori strips
  • ¼ cup of cornflour
  • ½ cup of self-raising flour
  • 1 tsp of smoked paprika
  • 1 tsp of onion powder
  • 1 tsp of curry powder
  • ¾ cup of cold water
  • 1 tsp of salt and pepper

Steps

  1. Prepare the chips by slicing potatoes in chips roughly 1cm in width.
  2. Place in a large bowl and coat with olive oil, salt and pepper to taste.
  3. Mix well and bake in the oven for 30 minutes at 200°C.
  4. Mix plain flour and chopped nori strips in one bowl.
  5. Mix cornflour, self-raising flour, smoked paprika, onion powder, curry powder, salt and pepper in another.
  6. Drain and rinse the banana blossom. Divide into four sections.
  7. Preheat a saucepan with vegetable oil for frying. Add the water to the cornflour mix and whisk well.
  8. Place the banana blossom into the dry mix bowl and coat all surfaces, transfer into the wet bowl and coat all surfaces.
  9. Drain off into the bowl and place into the vegetable oil. Fry until golden brown.
  10. Place onto a plate lined with paper towel and salt immediately.
