Ingredients

  • 1 cup dried red kidney beans, soaked overnight
  • 6 vegan sausages, sliced
  • 2 chillies, diced
  • 2 onions, diced
  • 2 stalks celery, diced
  • 1 green bell pepper, diced
  • 2 tbsp Cajun seasoning
  • 2 tbsp tomato paste
  • 5 cups vegetable stock
  • 2 bay leaves
  • 2 tsp fresh thyme
  • 6 cloves garlic, chopped
  • 1 tsp apple cider vinegar
  • ½ tsp black pepper
  • Rice

Steps

  1. Heat the oil in a large pot. Add the vegan sausage slices and cook until they start to brown.
  2. Add the onion, celery, chillies and bell pepper. Cook until the onions are translucent.
  3. Stir in the Cajun seasoning, vegetable stock, bay leaves, thyme, tomato paste and garlic.
  4. Drain the red beans and add to the pot. Season with black pepper and vinegar.
  5. Cover the pot and cook on medium heat for 1 hour or until the beans are soft.
  6. Meanwhile, cook the rice as directed on the package.
  7. Remove the bay leaves and serve with rice.
