Red beans and rice
Ingredients
- 1 cup dried red kidney beans, soaked overnight
- 6 vegan sausages, sliced
- 2 chillies, diced
- 2 onions, diced
- 2 stalks celery, diced
- 1 green bell pepper, diced
- 2 tbsp Cajun seasoning
- 2 tbsp tomato paste
- 5 cups vegetable stock
- 2 bay leaves
- 2 tsp fresh thyme
- 6 cloves garlic, chopped
- 1 tsp apple cider vinegar
- ½ tsp black pepper
- Rice
Steps
- Heat the oil in a large pot. Add the vegan sausage slices and cook until they start to brown.
- Add the onion, celery, chillies and bell pepper. Cook until the onions are translucent.
- Stir in the Cajun seasoning, vegetable stock, bay leaves, thyme, tomato paste and garlic.
- Drain the red beans and add to the pot. Season with black pepper and vinegar.
- Cover the pot and cook on medium heat for 1 hour or until the beans are soft.
- Meanwhile, cook the rice as directed on the package.
- Remove the bay leaves and serve with rice.
