Ingredients

  • 2 courgettes, grated
  • ½ tsp salt
  • 2 garlic cloves, finely minced
  • 2 scallions, finely sliced
  • 2 tsp chopped chilli
  • ¼ cup chopped coriander
  • Zest from a small lime
  • 1 tsp cumin
  • 1 tsp smoked paprika
  • 1 egg
  • ½ cup bread crumbs
  • ½ tsp baking powder
  • ½ cup grated cheese

Steps

  1. Grate courgette with a food processor with the grater attachment.
  2. Toss with the salt and place in a strainer over a bowl to let the liquid drain out for 30 minutes.
  3. Press out the remaining liquid with your hands.
  4. Add garlic, scallions, jalapeño, herbs, lime zest, cumin and smoked paprika. Mix.
  5. Add in the egg and mix it in well.
  6. Mix the baking powder with the breadcrumbs, then add both to the bowl. Add optional cheese.
  7. Give it a good stir. It should be like a thick paste. If it seems too wet, add a another tablespoon or two of bread crumbs.
  8. Heat oil in a pan. Spoon the mixture into the pan, creating golf ball-sized rounds. Flatten slightly, and sear each side until golden.
