Ingredients

  • Juice of 1 orange
  • 2 tbsp red curry paste
  • 1 tbsp olive oil
  • 1 tbsp sesame oil
  • 1 tbsp maple syrup
  • 1 tbsp rice vinegar
  • ½ cup peanut butter
  • 1 block tofu
  • 1 cup cooked rice
  • 1 can black beans, seasoned with sriracha.
  • 1 cup shredded cabbage
  • 1 cup shredded carrots
  • 1 red bell pepper, thinly sliced
  • 1 red onion, thinly sliced
  • 1 large avocado, sliced
  • ½ cup coriander or Thai basil
  • 4 tortillas, warmed.
  • Crushed roasted peanuts

Steps

  1. Drain and press the tofu and preheat oven to 200°C.
  2. Clean and cook the rice.
  3. In the blender add ingredients from orang juice to peanut butter, blend until smooth.
  4. Cut tofu into strips and brush all sides with peanut sauce, adding extra on the top.
  5. Bake tofu in the oven for 15 - 20 minutes.
  6. Heat the beans in the wok along with any spices you want to add.
  7. Warm the tortillas and assemble the burritos.
