Thai burrito
Ingredients
- Juice of 1 orange
- 2 tbsp red curry paste
- 1 tbsp olive oil
- 1 tbsp sesame oil
- 1 tbsp maple syrup
- 1 tbsp rice vinegar
- ½ cup peanut butter
- 1 block tofu
- 1 cup cooked rice
- 1 can black beans, seasoned with sriracha.
- 1 cup shredded cabbage
- 1 cup shredded carrots
- 1 red bell pepper, thinly sliced
- 1 red onion, thinly sliced
- 1 large avocado, sliced
- ½ cup coriander or Thai basil
- 4 tortillas, warmed.
- Crushed roasted peanuts
Steps
- Drain and press the tofu and preheat oven to 200°C.
- Clean and cook the rice.
- In the blender add ingredients from orang juice to peanut butter, blend until smooth.
- Cut tofu into strips and brush all sides with peanut sauce, adding extra on the top.
- Bake tofu in the oven for 15 - 20 minutes.
- Heat the beans in the wok along with any spices you want to add.
- Warm the tortillas and assemble the burritos.
