Ingredients

  • 1 small ripe banana, mashed
  • 1 tsp baking powder
  • ¼ cup sugar
  • ½ cup vegan white chocolate chips
  • 1 cup black sesame seeds
  • 4 tbsp vegetable oil

Steps

  1. Heat a non-stick pan on medium-high heat (no oil), and dry-roast the black sesame seeds, around 5 minutes.
  2. Add the roasted black sesame seeds to a food processor and blend first into a rough paste, around 1 minute.
  3. Then, add the vegetable oil one tablespoon at a time.
  4. Preheat the oven to 180°C.
  5. In a bowl combine the mashed banana, black sesame paste, baking powder, and sugar with a whisk.
  6. Finish this by stirring in the white chocolate chips.
  7. Using a spoon scoop the cookie mixture onto a lined baking tray, giving plenty of room between each cookie.
  8. Bake the cookies for around 18-20 minutes, or until the batter has set.
