Black sesame cookies
Ingredients
- 1 small ripe banana, mashed
- 1 tsp baking powder
- ¼ cup sugar
- ½ cup vegan white chocolate chips
- 1 cup black sesame seeds
- 4 tbsp vegetable oil
Steps
- Heat a non-stick pan on medium-high heat (no oil), and dry-roast the black sesame seeds, around 5 minutes.
- Add the roasted black sesame seeds to a food processor and blend first into a rough paste, around 1 minute.
- Then, add the vegetable oil one tablespoon at a time.
- Preheat the oven to 180°C.
- In a bowl combine the mashed banana, black sesame paste, baking powder, and sugar with a whisk.
- Finish this by stirring in the white chocolate chips.
- Using a spoon scoop the cookie mixture onto a lined baking tray, giving plenty of room between each cookie.
- Bake the cookies for around 18-20 minutes, or until the batter has set.
