Crispy sesame tofu
Ingredients
- Rice
- Broccoli
- Pak choi
- 1 courgette
- 1 block tofu
- 2 cloves garlic
- 1 inch ginger
- 3 tbsp soy sauce
- ¼ tsp chilli powder
- 3-4 tbsp sesame seeds
- 3-4 tbsp breadcrumbs
- 1 tsp sesame oil
- 3 tbsp tahini
- 1 tbsp peanut butter
- 1 tbsp soy sauce
- 1 tbsp brown sugar
- 5 tbsp water
- 1 clove garlic, finely minced
- 2cm ginger, grated
- ½ tsp Lemon juice
- 2 spring onions, chopped
- Chopped peanuts
Steps
- Drain and press the tofu.
- Mix the soy sauce, garlic, chilli powder and ginger, marinate the cubed tofu in it for at least two hours.
- Cook the rice.
- Mix sesame seeds and breadcrumbs and toss the marinated tofu in them.
- In a pan with oil fry the tofu until brown and crispy on all sides.
- Steam the broccoli and pak choi in the microwave.
- Cook the courgette with minimal oil in the pan, once cooked add the broccoli, pak choi and remaining marinade. Drizzle with sesame oil.
- Combine remaining ingredients to make sauce.
