Ingredients

  • 2 cups flour
  • 2 tsp baking powder
  • 1 tsp baking soda
  • ½ cup sugar
  • 1 ½ tbsp matcha powder
  • ½ tsp sea salt
  • ⅔ cup maple syrup
  • 2 tsp vanilla extract
  • ½ cup oil
  • ⅔ cup vegan white chocolate chips
  • ¼ cup dessicated coconut

Steps

  1. Preheat oven to 180°C.
  2. In a medium bowl sift flour, baking powder, baking soda, sugar, matcha powder, coconut and salt. Use a fork to combine.
  3. In another bowl, combine maple syrup with vanilla and oil and stir until well combined.
  4. Add the wet mixture to the dry and stir using a wooden spoon once or twice only!
  5. Then add the vegan white chocolate chips. Use a wooden spoon to fold until the vegan white chocolate chips are combined but don't over mix.
  6. Line a baking sheet and scoop the mixture into individual tablespoon sized balls.
  7. Smoosh the cookie dough down so that the cookies are flat.
  8. Bake the cookies for 11 minutes. Do not overcook!
