Ginger scallion ramen
Ingredients
- 4 tbsp vegan butter
- 6 shallots, thinly sliced
- 1 5-inch piece ginger, minced
- 5 garlic cloves, minced
- 1 bunch scallions, thinly sliced
- 2 tbsp soy sauce
- 1 tsp toasted sesame oil
- 2 tsp sugar
- 4 packets ramen
- Toasted sesame seeds
- Chilli oil
- Lime wedges
Steps
- Preheat a pan over medium heat. Add the butter. Once sizzling add the ginger and sauté for about 30 seconds.
- Reduce the heat to medium-low. Add the shallots and let them soften for a few minutes while stirring.
- Add the garlic and spring onion. Stir and cook for a few minutes. Add the sugar and soy sauce. Mix to combine and remove from heat.
- Cook the noodles according to package instructions minus one minute for cooking. Once done drain the noodles.
- Transfer the sauce to the noodles and toss to coat.
- Serve with sesame seeds, lime wedges, chopped scallions and chilli oil.
