Ingredients

  • 4 tbsp vegan butter
  • 6 shallots, thinly sliced
  • 1 5-inch piece ginger, minced
  • 5 garlic cloves, minced
  • 1 bunch scallions, thinly sliced
  • 2 tbsp soy sauce
  • 1 tsp toasted sesame oil
  • 2 tsp sugar
  • 4 packets ramen
  • Toasted sesame seeds
  • Chilli oil
  • Lime wedges

Steps

  1. Preheat a pan over medium heat. Add the butter. Once sizzling add the ginger and sauté for about 30 seconds.
  2. Reduce the heat to medium-low. Add the shallots and let them soften for a few minutes while stirring.
  3. Add the garlic and spring onion. Stir and cook for a few minutes. Add the sugar and soy sauce. Mix to combine and remove from heat.
  4. Cook the noodles according to package instructions minus one minute for cooking. Once done drain the noodles.
  5. Transfer the sauce to the noodles and toss to coat.
  6. Serve with sesame seeds, lime wedges, chopped scallions and chilli oil.
