Spicy tofu burger
Ingredients
- 1 block extra firm tofu
- 2 tbsp tomato paste
- 1–2 tbsp sriracha
- 2 tbsp mint, chopped
- 2 tbsp basil, chopped
- ¼ cup coriander, chopped
- 1 shallot, finely minced
- 1 tbsp lemongrass paste
- 5 tbsp all purpose flour
- ½ tsp salt
- Buns
- Sriracha
- Carrots, thinly sliced
- Red onion
- Red peppers
- Coriander
Steps
- Drain and press the tofu.
- Mash the tofu until it’s crumbly. Mix in the remaining burger ingredients. Form into patties.
- Preheat the oven to 180°C.
- Fry the burgers with a little bit of olive oil first to get the outsides nice and browned.
- Lightly cook red pepper slices in same frying pan.
- Transfer burgers to the oven and bake for 20-or-so minutes.
- Assemble burgers.
