Ingredients

  • 1 block extra firm tofu
  • 2 tbsp tomato paste
  • 1–2 tbsp sriracha
  • 2 tbsp mint, chopped
  • 2 tbsp basil, chopped
  • ¼ cup coriander, chopped
  • 1 shallot, finely minced
  • 1 tbsp lemongrass paste
  • 5 tbsp all purpose flour
  • ½ tsp salt
  • Buns
  • Sriracha
  • Carrots, thinly sliced
  • Red onion
  • Red peppers
  • Coriander

Steps

  1. Drain and press the tofu.
  2. Mash the tofu until it’s crumbly. Mix in the remaining burger ingredients. Form into patties.
  3. Preheat the oven to 180°C.
  4. Fry the burgers with a little bit of olive oil first to get the outsides nice and browned.
  5. Lightly cook red pepper slices in same frying pan.
  6. Transfer burgers to the oven and bake for 20-or-so minutes.
  7. Assemble burgers.
