Peanut lentil stew
Ingredients
- 1 red onion
- 6 cloves garlic
- 2 tbsp ginger
- 1 cup lentils
- 1 red pepper
- 1 green pepper
- 1 courgette
- 2 carrots
- Potatoes
- Chilli flakes
- Cumin
- Coriander
- Chilli powder
- 5 cups vegetable stock
- 1 tin canned tomatoes
- 1 cup peanut butter
- 1 ΒΌ cups rice
Steps
- Heat some oil in the wok.
- Cook the onion then ginger and garlic, until softened.
- Add the potatoes and cook for a bit, then add the carrot.
- Add the green pepper, red pepper and courgette along with the spices.
- Pour in the stock and lentils then bring to a boil and simmer for ten minutes.
- Add in the tomatoes and peanut butter, simmer until all vegetables are cooked.
