Ingredients

  • 1 red onion
  • 6 cloves garlic
  • 2 tbsp ginger
  • 1 cup lentils
  • 1 red pepper
  • 1 green pepper
  • 1 courgette
  • 2 carrots
  • Potatoes
  • Chilli flakes
  • Cumin
  • Coriander
  • Chilli powder
  • 5 cups vegetable stock
  • 1 tin canned tomatoes
  • 1 cup peanut butter
  • 1 ΒΌ cups rice

Steps

  1. Heat some oil in the wok.
  2. Cook the onion then ginger and garlic, until softened.
  3. Add the potatoes and cook for a bit, then add the carrot.
  4. Add the green pepper, red pepper and courgette along with the spices.
  5. Pour in the stock and lentils then bring to a boil and simmer for ten minutes.
  6. Add in the tomatoes and peanut butter, simmer until all vegetables are cooked.
