Spicy tofu with peach salsa
Ingredients
- 2 peaches, pitted and diced
- ½ small red onion, diced
- ½ jalapeño pepper, finely diced
- ¼ cup coriander, roughly chopped
- 1 tsp. sugar
- Zest and juice of 1 lime
- 1 (14 ounce) can light coconut milk
- ¼ cup water
- ⅛ tsp salt
- 1 tbsp coconut oil
- 1 cup rice
- Zest and juice of 1 lime
- 1 block tofu
- Zest and juice of 2 limes
- ½ jalapeño pepper, finely diced
- ¼ cup coriander, roughly chopped
Steps
- Drain and press the tofu.
- Combine all the ingredients for the peach salsa. Cover and refrigerate.
- In a pot bring the coconut milk, water, salt and oil to a low boil.
- Stir in the rice and turn the heat down to low. Cover and simmer for 15 minutes.
- Once the rice is cooked fluff with a fork and stir in the lime juice and zest.
- In a bowl combine the olive oil, lime zest and juice, diced jalapeño and coriander.
- Marinate the tofu in the mixture.
- Grill the tofu until brown on each side.
