Red curry stir fry
Ingredients
- 1 block tofu
- 1 can coconut milk
- ½ cup vegetable stock
- 6 cloves garlic
- 1 inch ginger
- ¼ cup peanut butter
- 1 tbsp red curry paste
- 1 lime
- 2 tbsp soy sauce
- 1 tbsp coconut oil
- 1 onion, diced
- 2 large carrots, chopped
- 1 head broccoli
- 1 cup green beans
- 1 red pepper
- Pak choi
- Rice
Steps
- Drain and press the tofu.
- Cook the rice.
- Blend the coconut milk, vegetable stock, garlic, ginger, peanut butter, curry paste, lime juice and soy sauce.
- Brown cubed tofu in the wok, then add the vegetables and cook.
- Pour three quarters of the sauce in and the pak choi with the vegetables and simmer until sauce thickens.
- Serve and pour remaining sauce over rice and stir fry. Serve with sriracha and lime juice.
