Ingredients

  • 1 block tofu
  • 1 can coconut milk
  • ½ cup vegetable stock
  • 6 cloves garlic
  • 1 inch ginger
  • ¼ cup peanut butter
  • 1 tbsp red curry paste
  • 1 lime
  • 2 tbsp soy sauce
  • 1 tbsp coconut oil
  • 1 onion, diced
  • 2 large carrots, chopped
  • 1 head broccoli
  • 1 cup green beans
  • 1 red pepper
  • Pak choi
  • Rice

Steps

  1. Drain and press the tofu.
  2. Cook the rice.
  3. Blend the coconut milk, vegetable stock, garlic, ginger, peanut butter, curry paste, lime juice and soy sauce.
  4. Brown cubed tofu in the wok, then add the vegetables and cook.
  5. Pour three quarters of the sauce in and the pak choi with the vegetables and simmer until sauce thickens.
  6. Serve and pour remaining sauce over rice and stir fry. Serve with sriracha and lime juice.
