Ingredients

  • 1 block tofu
  • 2 tbsp soy sauce
  • ⅓ cup agave
  • Juice of 1 lemon
  • Zest of 1 lemon
  • ½ cup vegetable stock
  • 1 tbsp cornflour
  • 1 tbsp water
  • Rice
  • Broccoli
  • Spring onions

Steps

  1. Drain and press the tofu.
  2. Cube the tofu and toss it with salt, pepper and olive oil.
  3. Bake at 180°C for 30 mins, flipping halfway.
  4. Cook the rice.
  5. In the heated wok whisk the soy sauce, agave, lemon juice and vegetable stock.
  6. Bring to a simmer then reduce heat and mix in the cornflour slurry.
  7. Once sauce has thickened mix in the lemon zest and toss in the tofu.
  8. Steam the broccoli in the microwave.
