Sticky lemon tofu
Ingredients
- 1 block tofu
- 2 tbsp soy sauce
- ⅓ cup agave
- Juice of 1 lemon
- Zest of 1 lemon
- ½ cup vegetable stock
- 1 tbsp cornflour
- 1 tbsp water
- Rice
- Broccoli
- Spring onions
Steps
- Drain and press the tofu.
- Cube the tofu and toss it with salt, pepper and olive oil.
- Bake at 180°C for 30 mins, flipping halfway.
- Cook the rice.
- In the heated wok whisk the soy sauce, agave, lemon juice and vegetable stock.
- Bring to a simmer then reduce heat and mix in the cornflour slurry.
- Once sauce has thickened mix in the lemon zest and toss in the tofu.
- Steam the broccoli in the microwave.
