Chimichurri cauliflower bowl
Ingredients
- 1 cauliflower, cut into florets
- 2 red peppers, cut in half
- 2 tsp coriander
- 1 tsp cumin
- 1 tsp smoked paprika
- 1 tsp chilli powder
- ½ tsp garlic powder
- 4 cloves garlic
- 1 tin black beans, drained
- ½ tsp cumin
- ½ tsp chilli powder
- ½ tsp smoked paprika
- Rice
- 1 avocado, sliced
- 1 mango, diced
- Chopped coriander
- Chimichurri sauce
Steps
- Cook the rice and preheat oven to 220°C.
- Toss cauliflower with olive oil, salt and spices in a large bowl.
- Roast cauliflower on a tray for 20 minutes, shaking them halfway. On another tray roast the bell peppers, cut side down.
- Make the chimichurri sauce (see other recipe).
- In a small pot cook the garlic, then add the black beans and spices and cook until heated through.
