Ingredients

  • 1 cauliflower, cut into florets
  • 2 red peppers, cut in half
  • 2 tsp coriander
  • 1 tsp cumin
  • 1 tsp smoked paprika
  • 1 tsp chilli powder
  • ½ tsp garlic powder
  • 4 cloves garlic
  • 1 tin black beans, drained
  • ½ tsp cumin
  • ½ tsp chilli powder
  • ½ tsp smoked paprika
  • Rice
  • 1 avocado, sliced
  • 1 mango, diced
  • Chopped coriander
  • Chimichurri sauce

Steps

  1. Cook the rice and preheat oven to 220°C.
  2. Toss cauliflower with olive oil, salt and spices in a large bowl.
  3. Roast cauliflower on a tray for 20 minutes, shaking them halfway. On another tray roast the bell peppers, cut side down.
  4. Make the chimichurri sauce (see other recipe).
  5. In a small pot cook the garlic, then add the black beans and spices and cook until heated through.
