Vegan sushi bowl
Ingredients
- 1 cup of rice
- 1 avocado, sliced
- Pickled ginger
- 1 small spring onion, sliced thinly
- Sesame seeds
- 1 block firm tofu
- 2 tbsp cornflour
- 1 cup edamame
- 1 red pepper, sliced
- ½ cup pomegranate seeds
- A few sheets toasted nori, torn into pieces
- 4 tbsp soy sauce
- 2 tbsp rice vinegar
- 2 tbsp maple syrup
- 2 tsp sesame oil
- 3-4 tsp Sriracha
Steps
- Drain and press the tofu and cook the rice.
- Cut up tofu and sprinkle lightly with cornflour.
- Fry tofu in hot oil until crispy and lightly coloured on both sides.
- Blot fried tofu on a piece of paper towel.
- Mix dressing ingredients and submerge tofu pieces in it for 5 minutes.
