Ingredients

  • 1 cup of rice
  • 1 avocado, sliced
  • Pickled ginger
  • 1 small spring onion, sliced thinly
  • Sesame seeds
  • 1 block firm tofu
  • 2 tbsp cornflour
  • 1 cup edamame
  • 1 red pepper, sliced
  • ½ cup pomegranate seeds
  • A few sheets toasted nori, torn into pieces
  • 4 tbsp soy sauce
  • 2 tbsp rice vinegar
  • 2 tbsp maple syrup
  • 2 tsp sesame oil
  • 3-4 tsp Sriracha

Steps

  1. Drain and press the tofu and cook the rice.
  2. Cut up tofu and sprinkle lightly with cornflour.
  3. Fry tofu in hot oil until crispy and lightly coloured on both sides.
  4. Blot fried tofu on a piece of paper towel.
  5. Mix dressing ingredients and submerge tofu pieces in it for 5 minutes.
