Sticky coffee glazed tofu

Ingredients

  • 2 blocks firm tofu
  • 1 tbsp BBQ sauce
  • 1 tbsp light soy sauce
  • 1 tsp sugar
  • ¼ tsp white pepper
  • 1 tbsp cornstarch
  • 1 shot espresso
  • 3 tbsp BBQ sauce
  • 2 tbsp maple syrup
  • 1 tbsp light soy sauce
  • 2 tsp dark soy sauce
  • 1 tsp cornstarch
  • Fresh chilli, sliced
  • Sesame seeds
  • Coriander, chopped

Steps

  1. Bring salted water to a boil in a saucepan. Once boiling lower to a simmer and add the tofu and cook for five minutes.
  2. Remove from heat and drain the water. Pat the tofu dry with paper towels and cut into batons.
  3. In a medium bowl mix the bbq sauce, soy sauce, sugar and white pepper. Add the tofu and toss until coated. Add the cornstarch and toss again.
  4. Air fry in a single layer for 18–20 minutes until golden and crispy.
  5. In the frying pan add espresso, bbq sauce, maple syrup, soy sauces. Bring to a simmer.
  6. Once simmering add the cornstarch slurry and cook until thickened.
  7. Add the tofu and toss until sticky and well coated. Top with sliced chilli, coriander and sesame seeds.
