Ingredients

  • 3 Roma tomatoes, diced
  • 1 cucumber, diced
  • 1 red onion, finely chopped
  • ½ green pepper, diced
  • 2 tbsp parsley, chopped
  • 2 tbsp coriander, chopped
  • 1 tbsp mint, chopped
  • ½ tsp sumac
  • Juice of 1 lemon
  • 2 tbsp olive oil

Steps

  1. Place tomatoes for a few minutes in a colander to release excess liquid.
  2. In a large bowl, place the diced tomatoes, cucumbers, onions, and bell peppers.
  3. Add herbs, sumac, lemon juice and olive oil. Season with salt and pepper. Toss to combine.
  4. If possible refrigerate for 30 minutes.
