Ingredients

  • 2 cups jasmine rice
  • 400ml coconut milk
  • 1 cup water
  • 2 tsp sugar
  • ½ tsp salt
  • 2 kaffir lime leaves
  • 1 tbsp dessicated coconut

Steps

  1. Rinse rice in water until the water runs pretty clear then add the kaffir lime leaves.
  2. In a medium saucepan add the coconut milk, water, sugar and salt over high heat. Bring to a boil and stir to dissolve the sugar.
  3. Pour mixture over rice and cook in the rice cooker.
  4. Meanwhile in a dry pan toast the dessicated coconut until lightly golden.
  5. Once rice is done cooking leave to sit for ten minutes. Then garnish with toasted coconut.
