Chinese broccoli with garlic
Ingredients
- 1 head garlic, peeled
- ΒΌ cup vegetable oil
- 1 tsp sesame oil
- 1 tbsp oyster sauce
- 300g Chinese broccoli
Steps
- Transfer garlic to a food processor. Pulse until finely chopped but not a paste, scraping down sides as necessary.
- Set a strainer over a heat-proof bowl. Heat oil in a small saucepan over medium heat until shimmering. Add garlic and cook, stirring constantly.
- Cook until garlic is pale golden brown, 6 to 8 minutes, then immediately strain. Transfer garlic to a paper towel-lined plate to cool.
- In a small bowl combine 1 teaspoon garlic oil, sesame oil, and oyster sauce. Mix well until combined, then add 1 tablespoon hot water. Stir and set aside.
- Bring a large pot of water to boil. Add the Chinese broccoli and blanch until just tender. Drain well on paper towels.
- Drizzle the mixed oyster sauce on top and sprinkle with the fried garlic. Serve immediately.
