Ingredients

  • 1 head garlic, peeled
  • ΒΌ cup vegetable oil
  • 1 tsp sesame oil
  • 1 tbsp oyster sauce
  • 300g Chinese broccoli

Steps

  1. Transfer garlic to a food processor. Pulse until finely chopped but not a paste, scraping down sides as necessary.
  2. Set a strainer over a heat-proof bowl. Heat oil in a small saucepan over medium heat until shimmering. Add garlic and cook, stirring constantly.
  3. Cook until garlic is pale golden brown, 6 to 8 minutes, then immediately strain. Transfer garlic to a paper towel-lined plate to cool.
  4. In a small bowl combine 1 teaspoon garlic oil, sesame oil, and oyster sauce. Mix well until combined, then add 1 tablespoon hot water. Stir and set aside.
  5. Bring a large pot of water to boil. Add the Chinese broccoli and blanch until just tender. Drain well on paper towels.
  6. Drizzle the mixed oyster sauce on top and sprinkle with the fried garlic. Serve immediately.
